Growing in Phoenix: Galangal is an integral flavor component in Thai cuisine. Related to ginger and turmeric, it is also used in Ayurvedic and traditional Chinese medicine. The outer skin is smoother and paler than ginger and the flesh ranges from white to yellow and pink. It has a stronger, more astringent flavor than ginger. The leaves are also edible and can be used in tea or to flavor food. This is an understory plant. Grow in the ground or a container in dappled to full shade. It needs a well-draining soil rich in organic matter with a soil pH ranging from 5.5-6.5. Galangal can be harvested 10 months after planting. Protect below 55 degrees.
