Pitaya
Growing in Phoenix: This is a climbing cactus with stunning night-blooming white flowers which can be up to 14 inches in diameter. Pitaya needs support to climb on. The best way to grow it is in a 15-gallon pot with a 6 ft trellis to climb. This allows for it to easily be moved from full sun in spring to filtered sun or afternoon shade once temperatures are above 90℉. As a tropical cactus, it requires more water than the desert types. Chill the fruit and cut it in half then scoop out the flesh with a spoon. Use in drinks, and pitaya blows. The red variety is rich in cancer-fighting lycopene and has striking red flesh. White and yellow varieties are also available. In winter protect it below 30℉.
